Apple Picking


Every year the Sum family goes apple picking. This year sure was an adventure. It took us almost 2 hours to actually find a place. We usually go to Edwards Apple Orchard in Poplar Grove, but we wanted to go somewhere closer this year. By the time we actually found a place, we could have already been picking apples at Edwards :). We had a fun time anyway. The whole family was together and my aunt, uncle and cousins came along with us as well. I was also having a good day with my "all-day" sickness, so that made it more pleasant. I had a really bad day Saturday and tried to sleep as much as could to get through the sickness.

Getting Ready




Byron and I will be leaving for our 5 day hike on the Appalachian Trail in Vermont in 2 weeks! This weekend we worked on our sleep system for our hammock (our tent). Byron's grandmother is helping us make a down quilt to sleep with and an undercover for the hammock to keep us warm. I would like to say that I helped more with the project, but I mostly napped on the couch and helped stuff the quilt with down. This lil' baby is taking everything I've got.

This is a "tent-hammock" instead of using a ground tent. It's great for the environment and also makes it easy to find a place to camp in the woods. Never a shortage of trees! We purchased the Safari Deluxe model. It is largest and only model made for two people. It sure is cozy!

Healthy Vegetarian Burritos

Today I was feeling pretty good, so I decided to cook one of our favorite meals. I love this one because it's super easy and I feel like I ate something really healthy and I am full and satisfied in the end. Yuuuum...

Healthy Vegetarian Burritos

Flour burrito shells
2 cups Brown Rice
1 to 1 1/2 cups black beans
1 cup sweet corn
1 cup shredded lettuce
1/2 cup of grated colby jack or cheddar cheese
Your favorite salsa
1 avocado, pealed and sliced
salt and pepper to taste

Cook the rice, beans and corn. Mix together. Meanwhile warm tortillas in the oven. On the warm tortilla put desired amount of rice mixture, lettuce, cheese, avocado, and salsa. Wrap up burrito-style and enjoy!

This recipe is also easy to double! Byron loves leftover vegetarian burrito in his lunch :)

Little Alien In My Tummy

We’re pregnant! We went to our first doctor’s appointment today. Everything is going great. I am 6 weeks and 2 days along in the pregnancy (which really means the baby is 4 weeks old). We actually have another appointment the day we leave for our hike on the Appalachian Trail just to make sure everything is okay before our adventure. I am a little nervous about how I am going to feel during the hike. I am already tired all the time. On Sunday I took a 3 hour nap after church and still slept through night! The cooking thing is getting hard. Everything makes me want to vomit, especially raw meat. Unfortunately, my symptoms are going to be at their peak during the time we are going on our hike. Other than that, we are very excited about the little alien growing inside of me.

The picture below shows how we told our families the "big news". We told them on Labor Day and decided to make t-shirts. In light of the holiday, my shirt said "Labor Day...May 2009" with a picture of a women who is in labor. Byron's shirt has picture of different animal fetuses in different stages and the last one being a human. He changed the word "human" to "Gehrig". His was a little more subtle than mine. There were many hugs and even happy tears. My sisters are very excited to be aunts!
